Porridge Bread

This is a wonderful bread made with porridge oats!

 

Ingredients

  • 2 tsp of bicarbonate of soda
  • 1 egg
  • 1 large tub of natural yogurt (500ml)
  • 2 yogurt tubs filled with porridge oats
  • 1/2 tsp of salt
  • 1 tsp milk
  • Optional - chia seeds , sunflower, pumpkin seeds and walnuts, about 50grms

 

Method

Step 1

Reheat the oven to 180*C/350*F/Gas Mark 4.

Step 2

Line a 2 lb tin with parchment paper.

Step 3

Place the yogurt, milk and egg into a mixing bowl.

Step 4

Using the empty yogurt tub, measure out 2 tubs of porridge oats and add to the bowl with the bicarbonate of soda.

Step 5

Add the (Optional) ingredients and mix thoroughly.

Step 6

Pour the batter into the loaf tin. Cut a line down the centre.

Step 7

You can sprinkle seeds on top if you wish.

Step 8

Place in the oven and cook for 45/50 minutes.

Step 9

Ten minutes before the end of the cooking time , remove the bread from the tin, turn upside down in the tin and cook for the remaining time.

Step 10

Leave to cool on a wire rack wrapped in a clean tea towel
