- 3 unwaxed lemons, cut and seeded
- 140g of caster sugar
- 1 litre of cold water
Put the lemons, sugar and half the water into the blender.
Pour the mixture into a sieve over a bowl and press out juice as much juice as you can.
Top this up with the remaining water and add ice, lemon and a handful of raspberries. Throw some edible flowers or hang some thyme from the side of the glass to make this really stand out.
